The Salad Sampler: A Quick & Easy Dinner Solution

If there is one thing I dread about Mondays, it is dinnertime. Trying to balance our evening workout, along with Brody's bedtime, the laundry from the week before, and a healthy dinner usually gets the best of me. By the time we get home from our fitness class, we have a 20 minute period to squeeze in dinner before putting Brody to bed. Far too many times, it has resulted in us eating granola bars for dinner.

For the past couple of weeks, we have been working on a solution and have officially dubbed Monday nights, The Salad Sampler. We pull out our fancy plates, grab a couple of bagged salads, a loaf of bread, and a bottle of bubble water and in 5 minutes flat, we have dinner ready to eat. 

This past week, we collaborated with Eat Smart Salad Kits for our salad sampler dinner. Their salads have been some of our favorites--filled with a healthy dose of greens (that aren't Iceberg lettuce), a variety of toppings, and a savory dressing. Their plant powered protein kits are awesome because they are packed with at least 11 grams of protein, making them much more filling than other salads at the store.

The BBQ Ranch kit is our favorite. Between the slivered almonds, chia seed, crunchy corn and soy nuts, and slightly sweet dressing--we were stuffed. We can't wait to try some of the other Eat Smart Salad Kits for dinner on Monday.
